
I have been wanting to start a food blog for awhile now. I have been posting pics of my food on FB because it is so easy but I would love to have a bigger space to share recipes and food pictures. I just love food, making it and eating it! I love to read and study about food and learn new and exciting techniques to prepare food. So here goes.....Tonight I wanted to make soup. I know the weather isn't cold yet but for some reason kids being in school and soccer practice makes me think of cool evenings and warm, filling soup. Minestrone is one of my favorites. I love it because you can really make it any way you like. I tend not to use pasta in mine b/c by the next day the pasta soaks up the broth and it gets all thick. Pancetta, beans and a lot of vegis and fresh herbs is my favorite way to make it. Giada De Laurentiis is one of my favorite chefs on TV. I make a lot of her recipes. I also made tomato soup for Lauren's lunches. I make a big pot, store some in the fridge and put the rest in ice cube trays. Anytime she wants tomato soup in her lunch I pop a couple cubes in the microwave and defrost!! Into a thermos it goes and she has fresh tomato soup for lunch! I gotta say I HATE canned tomato soup!! It tastes like metal and they usually add red peppers....which I do not like!!
Here is the tomato soup recipe
2 T. good olive oil
1 medium onion chopped
2 cloves garlic chopped
2 cans peeled, whole italian plum tomatoes (the best you can find!)
I large bunch of fresh basil, chopped
4 cups good chicken stock
salt and pepper to taste
1 cup heavy cream
Heat olive oil in a large pot on medium high heat. Saute onions in oil until translucent add garlic, stir for one more minute. Add tomatoes, stock, basil, salt and pepper. Let simmer for 15-20 minutes. Take off heat and use immersion blender to blend soup until smooth. Stir in cream. Taste for seasoning and add more salt and pepper if needed.

This is just so great! I am so happy for you! You are the best cook I know (besides myself, your apprentice ;) You have always been passionate about food and cooking even when we were in college (remember chicken cordon blu with white zin! LOL!) You have come so far and I am so excited to be your #1 fan! I will do the photos for the first book yeah! LOVE YOU DUDE!! Your food RULES!
Robyn! I am so glad that you decided to start a blog!!! You're totally inspiring. I love cooking and baking too but, I am positive that I don't have your expertise! :) In fact, I saw your tomato soup recipe and wanted to try it. I went to TJ today to get the whole plum tomatoes and they were all out...hmmm...I wondered if you grabbed them all...lol. :) Thanks for sharing your ideas, I already want to try them all!
