Tilapia





Have you tried tilapia yet? It is a small white fish. You can buy it individually frozen in packs. It's cheap too!  I always have this in my freezer. It thaws really fast so it is great for a quick meal. Tonight I steamed the fish with vegetables in tin foil packs on the grill. This is super easy  and the ingredients are simple. When you have fresh, quality ingredients you really don't have to do a lot to your fish. I made this for just me tonight, Dave has been out of town all week, but even when he is gone, I still cook for me and the kids. The kids don't like all the vegetables and the fish together (of course) so I just steam the fish in the tin foil without the vegis. Make broccoli on the side for them and some rice. 

Here is what you need:

Tilapia
Asparagus
Zucchini
Cherry tomatoes
Lemon
Salt
Pepper
Olive Oil
Butter
Arugula
Fresh chopped basil and parsley



  • heat grill to about medium high heat.
  • lay out 2 pieces of foil, overlapping.
  • cut vegis so they are about the same size. 
  • pile vegis in middle of foil. Season them with salt, pepper and a drizzle of olive oil.
  • season fish on both sides with salt, pepper and a drizzle olive oil.
  • lay fish on top of vegis.
  • take about a tablespoon of butter (the real stuff people, no fake butter in this house) and cut into pieces and lay around fish.
  • zest about 1/2 a lemon onto top of fish, then cut lemon and add 2-3 slices to the top of the fish.
  • Bring the corners of the foil together like a sachet and seal. Place on the grill. Grill fish for about 7-10 minutes. Mine was done in 10 minutes. Just make sure you check that the fish is done and the vegis are tender but not overcooked.
  • Take off of grill, open packs, sprinkle with fresh herbs. Eat right out of tin foil or plate it with rice and arugula.
I like to serve mine on a bed of brown rice and arugula. The arugula and the lemon really make the dish. I love the peppery, fresh taste the arugula adds and the lemon just gives it the kick it needs.
